In this blog, we'll cover how to make your own Wild Blueberry Herbal Infused Honey with the added benefits of thyme and lemon balm. This soothing remedy can help alleviate coughs and colds with its immune-boosting properties.

I recommend using raw honey instead of pasteurized honey. Remember, never give honey to children under 1 year of age.

  • Raw Honey: Rich in antioxidants and enzymes, raw honey has antibacterial and anti-inflammatory properties that can help soothe coughs and sore throats.

Method

  1. Fill the Jar: Fill a clean glass jar halfway with equal parts wild blueberry powder, dried thyme, and dried lemon balm. Mix thoroughly to ensure an even distribution. If you don't have access to fresh herbs, you can source dried herbs from a health food store, or even empty herbs from tea bags.

  2. Add Honey: Pour raw honey over the herb mixture, ensuring it's completely covered with no air bubbles. Stir thoroughly to mix well.

  3. Label and Infuse: Label the jar with the contents and date, then place it on a sunny windowsill for about 4 weeks to allow the herbs to infuse into the honey.

Note: To speed up the process, use a dehydrator set to 43°C (110°F) for 3 hours. This method allows you to enjoy the benefits of your herbal honey in a mere 3 hours!

  1. Strain: Once the infusion is ready, strain the mixture using a stainless-steel strainer lined with cheesecloth to remove the herbs and blueberry powder. Have patience during this process—take the lid off your glass jar and tip it upside down onto the cheesecloth/stainless steel strainer, allowing it to slowly strain over the course of a day.

  2. Store: Transfer the herbal honey to a new jar with an airtight lid and store it in the fridge.

How to Use

Take a spoonful directly to soothe your throat or add it to warm tea for extra relief.

Expiry

Your herbal honey will last for several months, up to 6 months, due to the introduced water and increased pH.
